What Is Chipped Beef Dip?

Eugene P.

Chipped beef dip generally is a heavy and savory dip that uses chopped, dried flakes of beef as its main flavoring. One of the most common recipes for chipped beef dip uses cream cheese and sour cream as a base to offset the meaty saltiness of the chipped beef. Ingredients such as onions, green peppers, Worcestershire sauce and garlic commonly are found in many recipes. A variation on the standard chipped beef dip is a hot dip that is served in a slow cooker or fondue pot and includes ingredients such as white wine, butter and mayonnaise. Although the taste of the dip might vary from one recipe to the next, such a dip generally goes well with hearty foods such as dense bread, cubes of cheese and roasted vegetables, although some preparations go equally well with crackers and fresh vegetables.

One very simple chipped beef dip recipe mixes softened cream cheese together with sour cream to lighten the texture and counteract the sweetness. Diced green onions, bell peppers and chipped beef are added to the mixture. Depending on the tastes of the cook and available ingredients, some recipes add powdered salad dressing mixes, garlic salt or dried soup mixes. The entire mixture is blended thoroughly and allowed to rest in a refrigerator before being served, although the dip also can be eaten at room temperature.

Variations on basic chipped beef dip can use Worcestershire sauce, grated or prepared horseradish or nuts such as walnuts or pecans. Paprika, cayenne pepper and diced hot peppers can all add some color and heat to the dip. The cream cheese and sour cream mixture also can be mixed with ingredients such as mayonnaise, heavy cream or crumbled pieces of cheese.

A hot chipped beef dip is similar to the cold version of the dip, except the ingredients can be baked in an oven or kept warm in a slow cooker or fondue pot. The recipe typically calls for mayonnaise, cream cheese and sour cream to be combined with finely diced onions, white wine, garlic and butter. Spices such as onion or garlic powder, paprika, cumin, nutmeg or ground allspice also can be added for some unexpected flavor.

Chipped beef dip can be served in a bowl or a slow cooker when hot. If a round loaf of bread is hollowed out, then the dip can be served inside the bread bowl. Foods that go well with chipped beef dip include bread, thick crackers and crisp vegetables.

Chipped beef dip is good, but gosh, chipped beef can be so salty! I usually rinse some of the salt off before I use it in the dip. I also might buy the very thinly sliced beef in the lunchmeat section and use that. The results are very similar and the lunchmeat may be salty, but not as much as the chipped beef. And I always add some hot sauce or cayenne for a little kick.

I like serving it in a bread bowl. They're very easy to make. Just hollow out a bread round and cut what you hollowed out into cubes. Serve the bread cubes with the dip.
