I think that plantains are delicious any way you make them, but I prefer them cooked in a very easy way. I like to slice them and boil them on the stove top until they are soft.

When the plantains are done, I simply serve them as a side dish to entrees like fish, chicken, and ham. I add a little bit of butter, salt, and pepper to enhance the flavor of the plantains.

@ocelot60- I have roasted plantains before, and they are very good prepared that way. For an easy, healthful roasted plantain recipe, all you have to do is slice several plantains in chunks or cubes. Spread them on a baking sheet, and set your oven at 350 degrees.

Next, sprinkle the plantains with several teaspoons of olive oil and your favorite herbs and spices. Place the baking sheet in the oven and roast the plantains until they are soft enough to fall off a fork. This usually takes about 30 to 45 minutes, but roasting time will vary depending on the oven.
