Maybe this doesn't count at a squash casserole, but my dad makes this amazing dish where he layers thick slices of eggplant with peppers, onions, and mozzarella cheese. Then the whole thing gets covered in tomato sauce.

It's kind of like lasagna but with eggplant instead of noodles. It is so tasty and so decadent but it is mostly vegetables.

My mom makes this incredible casserole that is a mixture of yellow and zucchini squash and goat cheese. It also has garlic and some spices and it is amazing. I could eat it every day.

You get the delicate and subtle flavor of the squash which is contrasted by the sharp and creamy goat cheese. I beg my mom to make it every time I go to visit.
