Does anyone here like goat cheese? Goat cheese pairs really well with caramelized onion on vegetarian pizza. I also add sliced red peppers and some baby spinach. I really like the variety of colors of these toppings and the result is quite delicious. I don't make pizza very often but this is my favorite combination when I do. All this talk of caramelized onion pizza made me hungry. I think I'll pick up the ingredients on my home and make it for dinner tonight.

@ddljohn-- I'm not too sure. There might be changes in acidity and sweetness of onions based on season and where it grows. You could try red onions which are generally sweeter.

I use yellow onions too. Adding just a pinch of sugar can increase the sweetness of these onions as they caramelize without upsetting the overall flavor of the pizza. I also like to add a pinch or two of turmeric for a nice yellow flavor. I think caramelized onions just look better that way.

And finally, make sure to caramelize them on low heat, mixing every now and again. Cooking slowly for a longer time makes them evenly cooked and even sweeter.

I usually prefer yellow onion over red when it comes to caramelized onion pizza. But lately, the onion isn't turning out as sweet as I would like. Are there different types of yellow onions out there? Does the sweetness vary based on season?
