Blueberry muffins are tasty baked goods that are ideal for a single serving of a sweet bread. Made with the usual ingredients necessary for most breads, the blueberry muffin will also make use of fresh blueberries to enhance the flavor of the muffin. While it is possible to purchase commercial muffin mixes that utilize dried berries, this simple pastry can also be prepared from scratch with relative ease.

A basic recipe for blueberry muffins begins with combining all purpose flour with granulated sugar, baking powder, and a pinch of salt. The dry ingredients are then mixed with eggs, milk and some vegetable oil to make the basic batter for the muffins. Once the batter is prepared, fresh blueberries are folded into the batter. It is important to inspect each blueberry to ensure that the berries are washed thoroughly and do not have any bruised areas that may contain bitter spots.

After the blueberry muffin batter is complete, the batter is spooned or poured into the individual compartments of a muffin pan. Depending on the type of pan, the compartments may be lined with paper cups, which makes releasing the baked muffin very easy. However, if the cups or liners are not used, it is a good idea to grease and flower each individual compartment before introducing the batter.

While many people prefer this simple recipe for blueberry muffins, some prefer to make a special crumb topping that is added to the top of the batter before cooking. The topping is usually composed of more sugar and flour that is enhanced with melted butter and a small amount of cinnamon. The end result is a cap for the muffin that is somewhat crumbly in texture and adds a buttery flavor that permeates the cap and also seeps into the main body of the muffin.

Generally, blueberry muffins that are made from scratch using fresh blueberries are considered superior to commercial muffin mixes. However, when fresh blueberries are not available, the mixes containing dried chunks of blueberries do work well. It is possible to enhance the appearance and taste of the commercial mix by adding the crumb topping to the top of the mix just before baking. This helps even the commercial muffin mix to have the appearance and at least some of the flavor of homemade blueberry muffins.

@calabama71: The Bisquick blueberry muffin recipe is the absolute easiest muffin recipe that I have ever made and I am happy to share! The ingredients are: 2 cups Bisquick, 1 egg, 2/3 cup milk, 1/3 cup sugar, 2 Tbsp. vegetable oil, and ¾ cup blueberries. You can buy the frozen blueberries and let them thaw.

Preheat your oven to 400. Grease a muffin pan or line with paper baking cups. In a bowl, beat the eggs. Stir in all of the other ingredients except the blueberries. After mixing well, fold the blueberries in. Divide your batter among the 12 muffin cups. Bake for 12-15 minutes or until golden brown.
