I think that the way the Greeks use spices is really underrated. When we think of Greek food we usually think of feta cheese and olives but Greek food is about more than just saltiness. This often gets overshadowed by the more flavorful cuisines further eat on the Mediterranean.
I have a great Greek seasoning recipe that is a blend of oregano, pepper flakes, lemon peel and marjoram, with just a little but of black pepper. When the proportions are right it is divine and it elevates any dish that it is sprinkled on.
