@dega2010: The reason for the different texture in the muffin top and the stump is that the muffin top is directly exposed to the hot air flow. This gives it that crispy texture. The stump (the part that stays in the cup), cannot make a crust because the edge of the muffin top pan keeps it moist.
As far as the taste goes, I think our mind plays tricks on us. I think that because the texture is different, we might think that it tastes a little different too.
