A variety of spices are used when making sausage seasoning, depending on the type of sausage that is being made. Sodium and sugar are common ingredients in almost all types of sausage seasoning. Other spices that are frequently used include cinnamon, ginger, and allspice. Ground pepper, sage, and oregano are also used in many types of sausage seasoning. Local food preferences and customs are strongly considered by sausage manufacturers when developing seasoning mixtures.

Sodium is an important part of the sausage-making process. Different forms of sodium are used to provide flavor, preserve the meat, and help the sausage hold in proper amounts of water in order to provide a palatable texture. Sugar is frequently used in sausage seasoning mixes in order to cut down on the salty flavor provided by the large amounts of sodium that are typically used when making sausage.

Bierwurst, also referred to as beerwurst even though it does not contain beer, is a type of German sausage. This sausage is usually served cold on a sandwich. Celery powder, sea salt, and brown sugar are often used as sausage seasoning in this type of sausage. Additional spices such as mustard seed and garlic may also be used in some formulations.

Chorizo is a Spanish or Mexican sausage that generally includes a seasoning mix made of chili powder and garlic. Italian sausage normally requires a sausage seasoning made from fennel or anise seed and garlic, although red peppers may be used in the hot variety. Kielbasa, also known as Polish sausage, typically contains salt, pepper, and garlic.

Breakfast sausage recipes tend to contain a sausage seasoning made from salt, pepper, and sugar. Additional spices that may be added include nutmeg, red pepper, or thyme. Breakfast sausage is available in several varieties, including mild, regular, and hot.

Head cheese, despite the misleading name, is actually a type of sausage. This sausage is made using meat from the head of a pig or cow and is generally served as a type of lunch meat. Some of the most commonly used spices in head cheese include allspice, salt, and onion. In some regions, head cheese is also known as souse or brawn.

Loukanika is a type of Greek sausage made from the meat of a lamb. Thyme, garlic, and marjoram tend to make up a portion of this kind of sausage seasoning. White wine is often used when making loukanika sausage, as it provides a distinct flavor.

Italian sausage must have fennel. Polish sausage must have anise. All sausage must have salt and black pepper. It is not necessary to put sugar or any sweetener in sausage. A good pork sausage needs only 80/20, to 70/30 ground pork. Salt to taste, with 1/4 as much fine ground black pepper as salt. Use 1/8 as much thyme, and 3-4 times as much rubbed sage as salt.
