@fBoyle-- Try adding some spices to add flavor.
My potato parsley salad turns out great. The trick is in the sauteed onions. I sautee onions in olive oil with some turmeric and salt and add this to the salad. I also use lemon juice, red chili flakes and lots of chopped fresh parsley. The onion, chili and parsley really flavor it up. Give this recipe a try, I'm sure you're like it. I often find that with onions, herbs and spices, we can make any dish very tasty.
