I went vegetarian a few year ago and it has been hard to find really decadent comfort foods to eat when you don't eat meat. One of my favorites is Velveeta macaroni and cheese, the one with the little shells.

I will cook up a box and mix in peas and add a little shredded cheese to the top. Oh it is so good. It is not the same as biting into a big cheese burger but it comes close.

I have a simple macaroni and cheese recipe that adds pepper jack cheese and tiny diced up jalapenos. It is basically like spicy Mexican macaroni and cheese.

My kids absolutely love it. We usually eat it with refried beans and the combination is surprisingly good.

My dad has an amazing recipe for homemade macaroni and cheese. I still ask him to make it every time I come home.

It is a pretty standard recipe but it has an amazing crumb topping and he adds bacon to the mac and cheese. It is so decadent but also so delicious. I have hesitated to ask him for the recipe because I know that if I had it myself I would make it all the time and it would go straight to my waist.
