These products are usually made with egg whites and intended for individuals who prefer to use them in an effort to lower the amount of fat and cholesterol they consume. Another way to make eggless chocolate cookies is by using cornstarch and water or mayonnaise as a substitute for egg. In such a case, a person can replace one egg by mixing one tablespoon (about 15 milliliters) of cornstarch with about three tablespoons (about 45 milliliters) of water and then adding the mixture to a cookie recipe. If a person doesn’t have cornstarch handy, some tips recommend using a couple of spoonfuls of mayonnaise instead.

To replace one egg, a person can use about 1/4 cup (about 60 milliliters) of applesauce, multiplying the amount of applesauce used by the number of eggs called for by the recipe. Some people also use bananas for this purpose. About 1/4 cup (about 60 milliliters) of mashed bananas can be used to replace one egg in a cookie mixture.

Many tips for making chocolate cookies without eggs also point to the use of yogurt and tofu. An individual may apply a tip that suggests using 1/4 cup (about 60 milliliters) of yogurt for each egg he needs to substitute. Regular and soy yogurt can be used for this purpose.
