I make roasted zucchini slices in the oven, at 350 degrees. It works great. I jut have to make sure that the zucchini is thinly sliced and that I flip them over half-way through. I use a tiny amount of olive oil to give them a nice golden color while roasting. It's delicious. I usually serve them with a fresh tomato sauce or garlic yogurt sauce. It's very Mediterranean.
